Evaporated Cane Juice Crystals
Evaporated Cane Juice Crystals are all-natural sweeteners produced from the “first crystallization” of juice pressed from the sugar cane stalk. It is different from refined sugar, whereas it is typically 50% less processed, therefore containing slightly more molasses. It provides a mild cane flavor, full sweetness and pale golden color in a fine granulated or powdered form. Evaporated Cane Juice may be substituted for any application in which granulated or brown sugar is normally used. The small particle size of evaporated cane juice makes it a perfect choice for baking and dry blending.
Evaporated Cane Syrup (Invert)
This liquid sweetener possesses the natural flavor and aroma of a premium cane syrup produced from the juices of sugar cane. It is a liquid invert that provides the manufacturer with an easy-to-handle alternative to granulated sugars. Invert refers to the dissolving of sugar into water, with the addition of natural enzymes or citric acid, a naturally occurring fruit acid, where a saturation point is achieved. Inverting allows for a higher percentage of cane sugar to be dissolved into water. The syrup is made from Evaporated Cane Juice and monitored for consistent, high quality. Using Cane Syrup saves the manufacturer time and money by eliminating the need to dissolve granulated sugars.
Sucanat is a granulated blend of the two sweeteners that typical sugar processing separates - sugar and molasses. Sucanat has a hint of molasses taste and is light brown in color. It has a higher nutritional level and lower sucrose level than traditional refined sugars, and has long been a favorite of the health food consumer. Sucanat's rich natural taste enhances many foods, especially, cookies, cakes, breads, and sauces. Sucanat is a granule, not a crystal, which has functional qualities desired by manufacturers: instantly soluble, free-flowing for efficient handling, homogeneous blending with other ingredients, and low moisture content which results in long shelf life for finished products. Sucanat granules are compressible which makes Sucanat an excellent excipient in tablets, vitamins, chewables, candies and breath mints. Due to its dispersion and solubility properties, Sucanat is also an excellent sweetener for dry mix drinks.
